Why do my product listings differ across channels?

Because each channel was populated separately and has drifted since. A description edited on the webstore, a title rewritten for a marketplace’s character limit, and an image updated in one place create three versions of one product. Without a source record they diverge further with every edit.

Some divergence is intentional, since channels have different formats and limits. The distinction worth keeping is between a channel-specific rendering of one fact and two channels holding contradictory facts.
